Don’t be put off by it’s name and ingredients, this recipe is so delicious and simple you could serve it as a supper for two or a posh dinner party.
Fresh Cod (choose the cut and amount to suit)
Large knob of butter
A few handfuls of chopped cherry tomatoes
Grated cheddar cheese (about a handful per person)
1. Melt the butter in a frying pan and lightly fry the cod on both sides to seal. Transfer the cod to a baking dish and pour the butter from the frying pan over the fish.
2. Sprinkle the chopped cherry tomatoes over the pieces of cod and then the grated cheddar.
3. Pop in a medium-hot oven for 15 mins until the cheese is bubbling.
Serve hot with stir-fry vegetables or a mixture of green vegetables.
