Vegetable Soup

Root vegetable soup

This is a real winter warming soup and it feels hearty and filling.

You will need:

­ 1 large onion finely chopped,

­ 1 clove garlic finely chopped,

­ 1kg (2.2lb) of root vegetables (carrots, parsnips, swede, potatoes, beetroot, turnips etc) chopped into 1 inch cubes,

­ Olive oil for cooking (approximately 2 tablespoons),

­ 1.5 pints of vegetable stock (home-made or from a sugar free stock cube).

What you do with all this:

­ Heat the olive oil in a large pan.

­ Fry the onion and garlic lightly until the onion becomes transparent.

­ Add all the vegetables and give them a good stir.

­ Add the vegetable stock and bring everything to the boil.

­ Reduce the heat and simmer lightly for about 30 minutes or until the vegetables are cooked.

­ Turn off the heat and allow to cool for 5 minutes before serving.

­ Leave chunky, or use a hand held blender to blend the mixture until smooth.

Add a dash of Tabasco if you like your soup with a bite or freshly ground pepper

    Have been reading your 3-step plan and it makes loads of sense to me. However, I already eat a diet based on meat/fish/eggs/veg/salad and grains/pulses with very little processed food (the odd jar of curry sauce etc). Will be diet work as well for me for weight loss as for those eating a lot of junk?

    just made the chicken soup with celery carrots and leek arlic splash of worte spoon of ginger teaspoon of splash of soy sauce and worcester sau 2 oxos salt and pepper it lovely and filling

    Hi Zoe,

    I am currently on Phase 1 and the only thing I’m struggling with is not being able to drink anything but water as I normally have a lot of fruit juice (I don’t drink any hot drinks – tea/herble tea/coffee)and so in Phase 2 is it possible for me to flavour water with fresh fruits?

    A friend of mine introduced me 2 this diet so glad she did cos I lost 5lbs in 4days.
    Im just starting the second phase and can’t wait 2 see the results in another 4 days.

    Just wondering what snacks I can have that are Harcombe diet friendly…I have both books but find at night after dinner I feel like some sort of desert or snack. I know that snacks are frowned upon but it will help me keep to the diet. I don’t snack all day mind you. Just in the evening. Thanks Deb Melbourne Australia
