This is a quick and nutritious snack or light meal that takes no more than 10 minutes to prepare and make – and that includes hard-boiling the egg.
Make sure you use a nice ripe avocado as you’ll be eating this with a spoon, scooping out the flesh of the avocado along with some of the egg ‘mayonnaise’.
Ingredients:
100ml Natural Live Yoghurt (NLY)
1 tsp Dijon Mustard
1 tbsp finely chopped pepper
Generous pinch of sea salt and fresh ground pepper
1 hard boiled egg, peeled and coarsely chopped
1 ripe avocado, cut in half and de-stoned
Method:
1. Put the NLY, mustard, chopped pepper in a bowl and mix thoroughly
2. Add the chopped egg, salt an pepper and give it a quick stir
3. Arrange the avocado halves on a plate and spoon the mixture into the cavity left by the stone.
Although this is strictly a phase 3 dish, you could get away with it as a treat on phase 2 – It’s a healthy, filling, fat lunch that will beat any sandwich hands down.
Can we eat avocado in phase 1 and use lemon in salads?
No avocado on Phase 1. Some lemon juice in a salad dressing is fine.

We have been following the diet and have both lost weight. Our main question is what can we have on toast? Are there sugar free jams that you would recommend? And can we have olive spread instead of butter on homemade wholemeal bread?
I don’t eat toast or jam any more so can’t advise on that one. I understand that there are some ok olive oil spreads around, but nothing beats butter, imho.

Can one use artificial sweeteners on the diet ?(for tea ?)
Sweeteners just perpetuate a sweet tooth. Best avoid them completely or find alternative drinks (to break the habit of sweetening a drink).
