Breakfast Omelette

1 large knob of butter
1 tbsp each of chopped tomatoes, red onion, peppers
3, or more, eggs
Salt and freshly ground pepper.

1. In an omelette pan, melt the butter and lightly fry the vegetables for 2-3 minutes.
2. Whisk the eggs in a bowl and pour the mixture into the frying pan then cook on a medium heat for about 5 minutes until the eggs are just turning firm. Season with sea salt and freshly ground pepper and then flip out onto a warmed plate.
